Keoki's Paradise' Corey Dotario takes us through their Miso Scallops and Bacon dish, step by step.
Ingredients: lemon zest, brown seaweed, chives, red onion, kukui nut, scallops, bacon, tomatoes, soy jou, tobiko
1) Sous-vide scallops at 131 degrees to pre-cook them.
2) Mix ino mono relish: Start with a pinch of lemon zest, just a little pinch.
3) Add brown seaweed. Cut chives. Fine, minced red onion and toasted kukui nut.
4) Add salt & mix.
5) To a hot pan, add scallops and bacon. Cook them through.
6) To a grilled tomato base, add the relish, top with the scallop and bacon.
7) Finish it off with orange tobiko and chopped chives.
