Infigo's Nicholas Salvi takes us through their Bacon Crab Raviolis with Seared Opah, step by step.


Ingredients: salt, pepper, basil, Opah, oil, garlic slivers, basil, bacon, sun dried tomato, white wine, spinach, cheese, ravioli, raw egg, mixed greens, fresh herbs, hibiscus syrup


1) Heat a pan.

2) Add salt, pepper, and basil to the fish. Add fish to the pan.

3) Heat another pan, add oil, garlic slivers, salt, pepper.

4) "Add a little bit of basil and bacon." Add a "little bit of sun dried tomato, hit it with wine and then turn it off."

5) Chiffonade spinach, add to filling.

6) Add cheese to filling.

7) Cook your ravioli by placing the pasta in water at a rolling boil.

8) Lay the ravioli out, place filling inside, fold, line seams with egg and close it up.

9) Place ravioli in a hot pan, "move it around, flip it over, turn it off."

10) Place the fish over mixed greens or spinach.

11) Top with cheese, garnish or fresh herbs.

12) Add hibiscus syrup.
