Lighthouse Bistro's Joe Caufield takes us through their Ginger-Crusted Ahi, step by step.


Ingredients: panko, pickled ginger, rice, fish, salt, pepper, flour, oil, zucchini, squash, onions, carrots, broccoli, soy sauce, wasabi, carrot curls.


1) Make a ginger crust, which is panko and ginger made pliable; put pickled ginger in a cuisinart or roboku and blend it until it's smooth.

2) Put rice in the rice cooker.

3) Season the fish with salt and pepper.

4) Flour the crust to prevent sticking.

5) Roll the panko ginger crust out to an 1/8th or an inch.

6) Cut the crust to match the shape of the fish.

7) Heat a pan, add oil, add the fish.

8) Dice zucchini, squash, onions, carrots, broccoli,

9) Prep your sauce; soy and wasabi.

10) Prep your plate - add rice, spread your sauce, add your vegetable medley, add the ahi to the top, garnish with a carrot curl.
