Merriman's executive chef Kevin Ives takes us through their Lemongrass-Scented Natural Chicken, with Coconut Sweet Potato Puree, step by step.


Ingredients: chicken, salt, cracked black pepper, sweet potatoes, coconut milk, olive oil, onions, lemongrass, young coconut, carrots, lime juice, cilantro, garlic, coriander seed, kaffir lime,


1) Brine and stuff your chicken with butter, season it with salt and cracked black pepper and grill it.

2) Make the sweet potato puree; sweating onions in olive oil. Add sweet potatoes to the onions. Stir them together. Add coconut milk.

3) Turn the chicken

4) Prepare the chicken jus. Use roasted bones from the bird. Add this to a cilantro and basil-based green curry. Add lemongrass, garlic, coriander seed and kaffir lime to curry. Bring to a boil.

5) Prepare the salad. Add carrots, peel fresh young coconut, dress it with lime and cilantro.

6) Plate the dish, "take the leg of our chicken, place it over the top of the sweet potato. Take our salad, and at the last minute dress it with lime juice, mix that up, take that salad, place it right over the top of the leg."
