Grilled Stuffed Portobello Mushroom with Shrimp Chef Demo - Postcards Café - KVIC-TV, myKauai.com
Postcards' Brandon Reid takes us through their Grilled Stuffed Portobello Mushroom with Shrimp, step by step.
Ingredients: portobello mushrooms, extra virgin olive oil, balsamic vinegar, salt, pepper, pinto beans, brown (or white) rice, fresh corn, red bell pepper, green bell pepper, diced tomatoes, hemp seeds (or pumpkin or sesame seeds), green onions, basil oil, basil, white cheddar cheese, red pepper puree, tomato vinaigrette, shrimp
1) Remove the stem of the portobello mushrooms. Toss them with extra virgin olive oil and balsamic vinegar, salt and pepper.
2) Put them on a plate and let them marinate.
3) In a bowl, add pinto beans, brown rice, cooked fresh corn, red and green bell pepper (small dice), diced tomato, hemp seeds (or pumpkin or sesame seeds)
4) Add green onion, basil oil.
5) Chiffonade basil, add that too.
6) Mix it up, sauté the stuffing until the beans soften.
7) Put the stuffing in your mushrooms.
8) Add white cheddar cheese.
9) Put the mushrooms in the oven for 15 minutes at 350.
10) Take a small plate, pour some red pepper puree on it, along with red peppers, olive oil, tomato vinaigrette, and basil oil.
11) Set the mushroom on the plate, garnish with basil.
12) It can be served with shrimp.
