The Hukilau Lanai's Ron Miller takes us through their Wally's Steak Crown Royal, step by step.


Ingredients: beef tenderloin, sauce or homemade stock (with red wine), salt, cracked black peppercorn, crown royal, basil redskin mashed potatoes.


"Start with a beef tenderloin. Trim it, we have to get the chain off and all the fat."

"To get the medallions, we cut 2.5 ounce, try to cut them all the same size so that they cook nice and even."

"We make a homemade stock for this dish that starts with about 50 pounds of bones, 20 gallons of water, and that cooks down for several days. After we strain the bones we infuse it with Ulupalakua red wine, which is the red wine made on Maui."

Season the steak "with salt and pepper, we use cracked black peppercorn... really press them on."

In a smoking hot pan, place the "peppercorn side down first."

Sear it for a couple of minutes on each side.

Add a crown royal-infused demigloss.

Let the sauce reduce a little bit, just a couple seconds.

Serve with basil redskin mashed potatoes.
