In this video, we're at the Dolphin Poipu, a fantastic sushi bar, restaurant, and fish market. Join me as I demonstrate how to create the exquisite Na Pali Roll.


Our expert fish cutters have provided us with a beautiful cut of Ahi tuna, perfect for this roll. First, we remove the sinew section, ensuring we have the best meat for our sushi.


Now, let's dive into the creation of the famous Na Pali Roll. We start by grabbing a bamboo rolling mat and placing a sheet of crisp nori on top, covered with cellophane. To prevent sticking, we slightly dampen our hands before handling the rice. It's crucial to evenly spread the rice to all four corners of the nori.


Next, we add our high-quality ingredients. Alaska snow crab, cucumber, and Avo go right down the center of the nori. Now comes the rolling technique. Using all our fingers, we bring the nori to the edge of the mat, compressing the ingredients inside. Gently bring the lip of the nori to meet the other end, being careful not to squeeze too hard and smash the rice grains. Utilize the rolling mat to perfect the shape.
