Roy's Poipu — Hawaiian King Moi Pesto, Poipu

Chef Matt De La Cruz demonstrates a jade pesto–steamed Hawaiian King Moi paired with sautéed Asian greens, Kilauea hydroponic tomatoes and North Shore watercress. The dish is finished tableside with hot scallion oil, toasted sesame and bright lomi tomatoes to highlight island-sourced fish and bold aromatics.
