Hawaiian King Moi Pesto Demo - Roy's Poipu - KVIC-TV, myKauai.com [Chef Demo]
Roy's Poipu Bar & Grill's Matt De La Cruz takes us through Roy's Hawaiian King Moi Pesto, step by step.
Ingredients: pesto (ginger, cilantro, scallions, oyster sauce, oil), king moi, onions, tomatoes, scallions, ryu (Japanese chili oil), salt, asian vegetables (baby bok choi, Thai choi, bell peppers), ginger, garlic, peanut oil, Chinese sizzling soy vinaigrette, seaweed, watercress, toasted sesame seeds, tobiko, scallion oil, lomi tomatos,
1) Make the pesto using ginger, cilantro, scallions, oyster sauce and oil.
2) Steam the king moi with the jade pesto sauce on top of it.
3) In a separate bowl, add micro diced onions and tomatoes. Add some chopped scallions.
4) Add ryu (Japanese chili oil) and salt. Mix it up.
5) Prepare your asian vegetables (baby bok choi, Thai choi, and some bell peppers). Sauté it up with ginger, garlic, and some ryu.
6) Put the bok choi as the base of your plate.
7) Take the fish out, set it over the bok choi.
8) Add peanut oil to a hot pan.
9) Add ginger & cilantro.
10) Put the hot peanut oil over the top of the dish.
11) Add Chinese sizzling soy vinaigrette to the base of the plate.
12) Garnish with seaweed, watercress, toasted sesame seeds, tobiko.
13) Add scallion oil, and the lomi tomatos.
