Pairing Wine with Kauai Food - Pork, Carrot Ginger Butter with Coppo Barbera d'Asti
Princeville Wine Market's Daniel Braun teams up with Grow Culture's Collin Darrell to pair wine with local foods. Today's food: "fresh island pork, and with this pork loin we'd like to feature carrots and ginger and make a carrot ginger butter to go over the top of that. Take some mountain apples that have a pear consistency and make a fresh cole slaw."
Daniel has recommended Coppo, Barbera d'Asti, "Camp du Rouss" (Piedmont, Italy) 2008 because "This wine is light to medium bodied, with silky tannins, a touch of earth and ripe, dark cherry. It's going to go really well with the pork, and that earth is also going to pair with the root vegetables in this dish."
