Seafood Bruschetta Demo - Nanea Restaurant in Princeville - KVIC-TV, myKauai.com [Chef Demo]
Nanea's Kahau Manzo takes us through their Seafood Bruschetta, step by step.
Ingredients: scallops, onions, garlic, shrimp, cherry tomatoes, fish, little-net clams, lemon, white wine, focaccia, olive oil, butter, green onions, salt, pepper.
1) To a nice hot pan we add scallops, onions and chopped garlic.
2) Add shrimp, some fresh cherry tomatoes, fresh fish.
3) Add little-net clams from New Zealand
4) To that we take half a lemon and we juice it into the dish.
5) Add some white wine to get the magic happening.
6) Cover it and cook the seafood through until the clams pop open.
7) Take thinly sliced focaccia, put olive oil and garlic, pop it on the grill and it will act as the garnish.
8) Add some whole butter.
9) Add some green onions, season with salt and pepper.
10) Plate the seafood, pour the broth over it.
